Abstract Dextran is an exopolysaccharide produces from bacteria that have been shown to be useful in the pharmaceutical and food industries. The goal of this study was screen capable producing dextran Thai fermented foods then maximize production. maximal amount produced by Lactobacillus fermentum OR1 isolated pickled mango juice 65 g/L after 20 h incubation at 30°C 200 rpm DMB2 Medium containing 160 sucrose.
